Reserve the remaining cordial you can use for breakfast cocktails, desserts, or for more rounds of this cocktail.
Bikini Recipe
Yields 10 servings
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Place the listed items into a pan, heat until it reaches a gentle boil, stirring to dissolve. After that, remove from the stove and let it to cool down entirely. Transfer into a sealable bottle, cap it and store in the fridge, it will last for up to one month.
For the Batch Mix: Combine every spirits and syrup into one large bottle, allow it to infuse for one hour, then strain best through muslin, making it fully clarified.
For serving: Pour 85ml of your batch mix to a mixing glass filled with ice, and stir gently for one minute to chill. Filter into a frosted cocktail glass or a similar vessel, garnish with a few cranberries and complete it by giving it a quick spritz with the mandarin essence over the top.
